Party Planning: Amelia’s 2nd Birthday

Y’all, my baby is turning two in a month! It’s a weird time to be party planning with all the concerns for COVID-19, and truth be told, we have no idea if we’re even going to be able to have a birthday party with our friends and family. But even if it’s just us, my girl will be celebrated! Today I’m going to share the theme and ideas for her “Taco Two-sday” themed birthday party.

But first, can we take a minute to recognize that these pictures were almost a year ago! I feel like it was yesterday that we were celebrating Amelia turning one, and now she’s a nearly-two-year-old big sister who is walking, feeding herself, and asking to go outside. Where did my baby go?!

Taco Two-sday Themed Decorations

I love decorating for parties. My husband definitely shakes his head and tells me I’m over-doing it every time we have a family party. I can’t help myself! Anyway, here are some of the items I’m looking at to create our theme for Amelia’s party, and description below of how I plan on using them.

Menu Ideas

I’m planning on a taco bar, of course! Amelia loves strong flavors and taco-seasoned ground beef was one of the first meats I could get our previously-picky-eater to eat, so when I saw some adorable ideas on Pinterest for this idea (no, it’s not my own — I’m not nearly that creative!), it felt right. And full disclaimer: I love to cook, but I’m in no way a baker. That’s all my mother-in-law, but she will be having surgery in the weeks prior to Amelia’s birthday so I *think* the cake will be a Hayley Harrison creation… you’ve been warned! As of right now, the menu is as follows:

  • Chips and veggies with guacamole, salsa and queso for dipping
  • Taco bar complete with
    • Soft and crunchy taco shells/tortillas
    • Rice
    • Black beans and refried beans
    • Shredded chicken, ground beef & shrimp
    • Shredded lettuce, diced tomatoes, sautéed bell peppers & onions, pickled jalapeños and black olives
    • Sour cream, guacamole, salsa, queso and shredded cheeses
  • Mexican street corn
  • Birthday cake and/or cupcakes

Outfits

Of course the birthday girl needs a special outfit, but I also found some fun t-shirts for her Papi and me, and an adorable outfit for her baby sister.
